Kale and Portobello Mushrooms


This is a recipe I borrowed from Rachel Ray. I love her! I wanted a way to incorporate kale into my diet. This veggie is one of the most nutritious things you can eat. I make this once a week and pair it with a fish dish. Then I have leftovers for lunch with some chicken or low-fat cheese.

  1. Have you tried making kale "chips"??? Soo yummy. Drizzle with olive oil, lay flat on cookie sheet, throw some sea salt (and pepper if you're in the mood) and bake for a bit. Crunchy Yummy.
